Pork Shoulder250 g

Preparation
1. Separate Salted egg yolk with Salted egg white.
2. Combine cornstarch with water to form slurry.
Steps

Put ginger and spring onion into 2 separate condiment bowls of the Cordless Food Processor. Put the cap on and blend into small pieces. Set aside.

Cut pork into chunks and place into the glass bowl of Cordless Food Processor. Put the cap on and blend for 5-10 seconds.
3.
Add minced ginger and marinade into minced pork. Put the cap on and blend for 2 seconds.
4.
Add salted egg white to the pork. Mix the pork using one hand. Then add in around 1 tbsp of water while mixing. Continue until the pork can slide down from the palm.
5.
Shape the pork into a small mountain in a deep dish. Place the salted egg yolk on the tip.
6.
Preheat Steam & Grill Oven at 100°C. Steam for 40 min.
7.
Remove pork from oven. Serve with sweet soy sauce and garnish with chopped spring onion.
Tips:
Your best pick for pork meat is meitou, with fat-lean ratio of 3:7. When mixing minced pork with your hands, avoid exerting too much pressure or else the meat loaf will not be soft and fluffy enough.
