Bring a pot of oil to heat, then add garlic, shallot, ginger slices and onions, stir-fry to bring out their aroma.
Add chicken pieces then stir-fry with seasonings.
When the chicken pieces are 70% done, cover the lid and switch to medium-low fire for 10 minutes. Stir-fry when necessary to avoid chicken sticking to the bottom of the pot.
Add cilantro and Chinese celery, then simmer for 3 minutes. Serve Hot.
