Ingredients(Yield: 5 pieces)
300g glutinous rice
13g alkaline water
75g lotus seed paste
Soak glutinous rice for 4 hours. Drain. Add alkaline water and oil. Mix well. Allow resting for 1 hour.
Soak bamboo leaves in water until soft. Turn on the Auto- Power Switch Multifunctional Health Cooker and select "Boil" function. Bring water to a boil. Blanch the leaves for 1 minute. Remove.
Roll bamboo leaves into circular cone shape and add glutinous rice. Add lotus seed paste and cover with glutinous rice. Fold leaves on the upper part downwards until the opening is covered completely. Follow the edges of the triangle and wrap all leaves. Tie with cotton string.
Place dumplings inside the Ultimate Rice Cooker, add water to cover dumplings. Choose "Cook Time" button and set the cooking time to 60 minutes. Remove and serve when done.
Avoid wrapping the dumplings too tight. They should make some sound when shaking gently.
