Ginseng Chicken Soup

Ingredients:
Spring Chicken1
Glutinous Rice1/2 cup (soaked in water for 1 hr)
Fresh Korean red ginsengs2 (poked holes)
Peeled Chesnuts4
Red Dates4
Ginko Nuts6
Pine nuts1/2 tbsp
Honey1 tsp
Seasoning:
Salt1 tsp
Honey1 tsp
Steps:

Rub the whole chicken with 1/2 tbsp salt. Rinse and drain. Set aside.

Brush the inside cavity of the chicken with honey, mix glutinous rice, ginsengs, chestnuts, dates and ginko nuts well and put inside the chicken. Seal with bamboo stick.

Select the "Slow-stew" function on the Auto-Power Switch Multifunctional Health Cooker and set timer to 2 hrs. Place chicken inside the cooker and just enough water to the marker level. Turn the chicken once during slow-stewing. Once cooked, season with salt and honey. Sprinkle with pine nut. Done.
Tips:
Rubbing the chicken with salt can kill germs. Poke holes in ginsengs to release flavour during cooking. Brush honey on the inside cavity of chicken to make the flesh taste more delicious.
