Spare Ribs with Chinese Cured Meat Clay Pot Rice

Ingredients:
Rice
3 cups
Water
1.5 cups
Cured pork belly
1pc
Spare ribs
200g
Ginger (Shredded)
Garnish
Spring onion (Chopped)
Garnish
Zhitian Pepper (Chopped)
Garnish
Seasonings:
Light soy sauce
70ml
Dark soy sauce
200ml
Sugar
50g
Steps:
1.
Soak rice in water for 1 hr. Strain and set aside.
2.
Cook soy sauces and sugar in saucepan till it forms a sweet soy sauce.
3.
Blanch cured pork belly in water for 2 min. to cut down grease. Cut into slices.
4.
Set Ceramic Cooker to 1600W. Brush ceramic pot with oil, add rice and 1.5 cups water, cook 8 min.
5.
Add spare ribs and cured belly, lower heat to 300W and cook 8 min. Remove from heat, cover with lid and let sit for 3 min.
6.
Sprinkle on ginger, chili and spring onion. Drizzle sweet soy sauce.
