Fresh Eel with Black Bean Claypot Rice

Ingredients:
Fresh white eel
1/4pc
Spare ribs
200g
Black bean
1 tsp
Spring onion
Garnish
Marinades:
Oyster sauce
1 tsp
Yellow soy bean paste
1 Tbsp
Sugar
1/2 tsp
Soy sauce
1 tsp
Seasonings:
Light soy sauce
70g
Dark soy sauce
200g
Sugar
50g
Steps:
1.
Soak rice in water for 1 hour. Strain and set aside. Marinate eel and spare ribs in marinadesfor 30 minutes. Cook soy sauces and sugar in saucepan till it forms a sweet soy sauce. Finely chop spring onion and set aside.

Brush claypot with oil.

Preheat claypot on ceramic cooker at 1600W. Add 3 cups rice + 1.5 cups water, cook for 8 minutes.

Place on marinated spare ribs and eel, lower heat to 300W and cook for 9 more minutes. Remove from heat, cover with lid and let sit for 3 minutes.
5.
Sprinkle on spring onion and drizzle sweet soy sauce. Serve.
