Chinese Cured Meat Claypot Rice

Ingredients:
Rice
3 cups
Water
1.5 cups
Chinese sausage
1 pc
Chinese liver sausage
1 pc
Cured duck leg
1 pc
Seasonings:
Light soy sauce
70ml
Dark soy sauce
200ml
Sugar
50g
Steps:
1.
Soak rice in water for 1 hour. Strain and set aside
2.
Cook soy sauces and sugar in saucepan till it forms a sweet soy sauce
3.
In a saucepan, blanch sausages and duck leg in boiling water for 2 minutes to remove excess grease
4.
Cut duck leg into pieces and sausages into thin slices.
5.
Brush claypot with oil.
6.
Preheat claypot on ceramic cooker at 1600W. Add 3 cups rice + 1.5 cups water, cook for 8 minutes.
7.
Add in duck leg and sausages, lower heat to 300W and cook for 8 more minutes. Remove from heat, cover with lid and let sit for 3 minutes.
8.
Drizzle sweet soy sauce and serve.
