Lemon Cheese Cake

Steps:
1.
Soften butter at room temperature.
2.
Blend butter and digestive biscuits with the Professional High-Speed Food Processor until well mixed. Remove and spread on the bottom of the cake mould evenly. Set aside.
3.
Add 2 tbsp of water to gelatine powder. Well mixed over a hot water bath. Set aside.
4.
Beat cream cheese until smooth with the Electric Hand Mixer. Add egg yolk in batches. Add sugar, lemon juice and salt until well mixed.
5.
Add milk in batches and blend with the Electric Hand Mixer until well mixed. Stir in gelatine mixture.
6.
Stir in whipped cream and pour mixture onto the cake base. Refrigerate for 90 minutes until set. Serve.
