Snowy Mooncake

Less than 30 min
Ingredients(Yield: 4 mooncakes (150g each)):
Snow Skin :
50g glutinous rice flour
50g rice flour
25g wheat flour
25g cake flour
250ml milk
50g condensed milk
25g oil
45g caster sugar
Fillings:
300g purple potatoes (peeled, sliced)
100ml water
45g sugar
20g malt sugar
25g oil
Tool:
mooncake mould
Steps:
1.
Turn on the Auto-Power Switch Multifunctional Health Cooker and select "Boil" mode. Add milk, Condensed Milk, sugar and oil and cook it until sugar melt. Cool down and set aside.

Mix all the flour with milk. Blend it with blender until it soft. Pour it on the tray and steam it for 20 minutes. Cool it and set aside.

Divide the dough into small portions and freeze it for 3 hours.

Steam the sweet potato for 10 minutes. Blend it to paste with blender.

Turn on the Auto-Power Switch Multifunctional Health Cooker and select "Stir-Fry" mode. Stir-fry the sweet potato paste with oil. Switch to "Boil"mode and add the sugar, Malt Sugar and water to the sweet potato paste and cook it until sugar melt. Cool down and freeze it for 4 hours.

Bake the Glutinous Rice Flour for 10 minutes in 80℃.

Thin the dough and wrap it with sweet potato paste. Sprinkle some of the baked glutinous rice flour and put it in to the mould. Done
Tips:
The nonstick inner pot of Auto-Power Switch Multifunctional Health Cooker conducts heat quickly and evenly. It prevents the moon cake stuffing from sticking.
