Lobster Bisque

Ingredients:
Fresh Lobster
Shrimp Heads and Shells
Butter
Olive Oil
Chicken Stock
Water
Onion (diced)
Carrot (diced)
Celery (diced)
Tomato (diced)
Tomato Paste
Fresh Thyme
Bay Leaf
Black Pepper Crushed
White Wine
Brandy
Steps:
1.
Freeze lobster in the refrigerator for putting it to sleep. Then cook it with boiling water. Soak in iced water and set aside.
2.
De-shell lobster. Cut its meat and fat into small pieces. Other parts set aside.
3.
Stir-fry lobster head and shrimp heads with Smart Stir Fryer until dry. Sauté with olive oil and butter. Add chicken stock and water. Close lid and cook for 15-20 minutes.
4.
Set “Fry” mode at Multifunctional Health Cooker. Sauté diced onion. Season with salt until onion turn brown. Fry with carrot, celery, bay leaf, thyme and tomato paste. Add brandy and chicken stock. Close lid and cook until vegetables turn soft.
5.
Sieve off lobster heads and shrimp heads from soup. Then pour soup into the Cooker. Add chicken stock and black pepper crushed. Add brandy until it boils. Turn off the Cooker. Mix lobster meat and fat with soup and then serve.
