Sweet Potato Casserole

Ingredients:
150 g Sweet Potatoes (peeled)
Marshmallows
Unsalted Butter
Light Cream
Sugar
Ground Cinnamon
Vanilla Extract
Steps:

Cut sweet potatoes into cubes. Put in a saucepan and cover with water. Bring to a boil. Then simmer for 25 min.

Drain sweet potatoes and place in a large bowl. Mash until fairly smooth. Add butter, cream, brown sugar, cinnamon and vanilla extract. Mix well.

Transfer mashed potato to a round baking dish (greased). Cover with foil and bake inside Halogen Cooking Pot using High Rack at 250°C for 25 min or until heated through.

Remove foil and arrange marshmallows on top. Return to the Halogen Cooking Pot (use Low Rack) and bake for another 3 min, or until marshmallows turn golden brown.
