Red Wine Pork Knuckle Stew

Ingredients:
Pig Hock
Celery
Carrot
Turnip/Radish
Tomato (peeled)
Mushroom
Mixed Mushrooms
Onion
Garlic (diced)
Shallot (peeled)
Ginger
Steps:
1.
Wash and clean pig hocks. Chop hocks into big chunks and then scald in hot water.
2.
Open Ultimate Rice Cooker lid, pre-heat inner pot by pressing “Meat” button (keep lid open).
3.
Stir-fry ginger with olive oil in cooker. Add pig hocks and fry for a few minutes.
4.
Pour half of the chicken stock into cooker. Close lid and simmer hocks for 15 min (keep lid unlocked).
5.
At the same time, stir-fry chopped onion and garlic in a saucepan. Add the rest of the vegetables, the remaining chicken stock and seasoning. Pour in red wine and simmer to a boil.
6.
Open Ultimate Rice Cooker lid. Add cooked vegetables into cooker. Lock the lid and press the “Soup” button. Once the “keep warm” indicator lights up and the interior pressure is fully released through the safety valve, open lid and serve.
