Fettuccine with Lobster & Tomatoes

Ingredients:
Bread Flour
Salt
Egg
Tomato Juice
Olive Oil
Lobster
Ripe Tomato (diced)
Garlic
Shallot
Fresh Basil or Chives
Steps:
1.
Steam lobster in Jet Steamer for 8 min. Remove meat from shells and cut into 1 cm pieces.

Whisk egg. Add in oil and tomato juice, set aside. Put flour and salt into Dough & Noodle Maker. Close top cover and press “Knead”. 30 sec later, gently pour in egg mixture through the cover. Let mix and knead.

When dough is done, remove slat and press “Extrude” to make fettuccine. Cook in salted boiling water for 4 min. Drain water.

Heat oil in a pan. Saute garlic and shallot until fragrant. Add tomato, wine and ½ cup of boiling water. Simmer for 3 min.
5.
Add lobster into sauce and stir through. Toss in pasta and herbs. Saute slightly over medium heat. Done.
