Mini Mooncakes

Less than 30 min
Ingredients:
Plain Flour
Inverted Syrup
Vegetable Oil
Alkaline Water
Lotus Seed Paste
Egg (beaten)
Steps:

Mix syrup, vegetable oil and alkaline water in a bowl. Add flour and knead into dough. Cover with plastic wrap. Set aside for 35 min.
2.
Divide dough and lotus seed paste into 8 portions. Roll into balls. Flatten dough, fill in lotus seed paste. Press into mold to form mooncakes.
3.
Arrange mooncakes on Baking Plate (lined with parchment paper). Put into Halogen Cooking Pot over Low Rack. Bake at 170-180°C for 5 min.
4.
Glaze mooncakes with beaten egg and bake for another 4-5 min until browned.
