Mix glutinous rice flour with sugar, water, coconut milk and oil. Add matcha powder and mix well.
2.
Prepare a tray. Brush the tray with a light film of oil. Sieve the mixture and pour into the tray.
3.
Use tin foil to cover the whole tray. Place in Multi-Functional Steam & Grill Oven and steam at 110°C for 10 min. Take out, set aside and let the mochi skin cool.
4.
Sprinkle corn starch. Cut the mochi skin into square pieces.
5.
Scoop up ice cream and place over mochi squares. Wrap and serve.
Tips:
Glutinous rice flour must mix well with water. When steaming the mochi skin, remember to keep the mochi skin thin. You can also make it thinner by using a rolling pin. When wrapping the mochi, remove excess mochi skin. Freeze the mochi before serving for better taste.
