Tom Yum Goong

Steps:
1.
Peel the lemongrass and remove the top, take the tender middle part, flatten it, cut it into sections, and set aside.
2.
Boil the water, add the soup, then add the galangal and lemon leaves and boil.
3.
Add the shrimps, blanch them and scoop them up, soak them in ice water and set aside.
4.
Put straw mushrooms, eggplant, fish sauce,cone pepper, lemon juice, lemongrass, shallots and tom yum paste into the soup and bring to a boil.
5.
Add lime juice and coconut milk and mix well. You can add lemon juice according to taste.
6.
Add tomatoes and shrimps and cook for 2 to 3 minutes.
