Eggplant Omelette

Corn StarchTo taste
Sweetened Preserved RadishTo taste
Steps:
1.
Grill eggplant until skin is charred. Remove the skin and use fork to gently squash the flesh. Add corn starch.
2.
Whisk egg with corn starch. Pour the mixture into a plate and mix with eggplant flesh.
3.
Heat oil on the Grill Pan of the Compact Induction Cooker and fry the eggplant until crispy. Add sweetened radish. Turn and fry the other side until golden brown.
