Soufflé Pancake

Steps:
1.
Preparation: Separate yolk and egg white into two different containers.

Use the whisk of the Cordless 3-in-1 Hand Blender to evenly beat egg yolk. Stir in the milk. Sift flour and baking powder into the mixture. Stir until smooth.

Beat egg whites using the whisk until semi-soft. Add sugar in 3 separate times.
4.
Add one third of egg whites into egg yolk batter. Gently fold the batter until combined. Fold in the remaining egg whites.
5.
Grease the grill pan of the Induction Cooker and set to Level 2 of heat to preheat the pan. Scoop 3 tablespoonful of batter onto the pan and fry for 2 minutes. Turn to the other side, add 2 teaspoons of water to the pan, cover and fry for about 3.5 minutes. Dish up pancakes. Done.
Tips:
Whisk the batter gently. Don't over-mix the batter. Use a skewer stick to test the doneness. You can fry the pancakes for 5-7 more minutes if you prefer darker color.
