Tomato Soup with Seafood & Herbs

Ingredients:
Onion
Carrot
Celery
Potato
Tomato
Basil
Chicken Stock
Fresh Scallops
Fresh Prawns
Fish Fillet
Olive Oil
White Wine
Steps:
1.
Stir-fry onion with olive oil until fragrant. Add carrot, celery and potato. Stir-fry until tender.
2.
Add tomato. Stir-fry until watery. Add basil, chicken stock and seasonings. Cook for 50 min.
3.
Pour soup and ingredients into the measuring cup. Use Cordless3-in-1 Hand Blender to blend the soup and ingrdients together until the soup is of desired consistency.
4.
Scald scallops, prawns and fish fillet in hot water. Add a little white wine. Dish up and set aside.
5.
Upon serving, add (4) into soup.
