Apply salt all over the chicken and marinate for 10-15 minutes. Remove seeds from red dates and soak glutinous rice for 3 hours.

Stuff the chicken with glutinous rice, Chinese wolfberries, red dates and lotus seeds. Seal the opening with toothpicks.

Place ginger and spring onions on the bottom of the inner pot of IH Pressure Rice Cooker. Put in chicken and stock. Select the "Meat" function and cook for 35 minutes.
