Hainanese Chicken Leg Over Rice

Ingredients:
Rice Grain
Chicken Stock
Chicken Leg
Salt
Lemongrass
Ginger
Pandan Leaf
Garlic Red
Chili
Ginger
Light Soy
Sauce
Sugar
Lime Juice
Chili Paste
Steps:
1.
Marinate chicken with salt and white pepper.
2.
Dice up garlic, chili and ginger. Mix with soy sauce, lime juice and chili sauce for dipping, set aside.

Wash and drain rice grain. Put rice, chicken stock, salt, ¬lemongrass, ginger, pandan and garlic into IH Pressure Cooker. Select “Pilaf” function. Set cook time to 30 minutes.
4.
Place chicken leg on top of rice and set cook time to 15 minutes.
5.
Remove chicken leg from cooker and cut into small pieces. Serve hot with dipping sauce.
